Step by Step Method

Step 1

Shell and chop the eggs. Push the eggs, tuna and ricotta through a sieve into a bowl.

Step 2

Stir in the capers, basil, lemon zest, lemon juice and butter and season to taste with salt and pepper. Shape the mixture into balls and chill in the refrigerator until ready to serve.

Step 3

Just before serving, arrange a bed of rocket on a platter and place the tuna bites on top.

What an interesting and different meal this recipe made. We loved all the flavors strewn through the tuna bites. We would have loved to have had it over arugula which would have been way more interesting, but the market was out, so used iceberg lettuce. Made a wonderful lunch! Thank you, MsPia, for sharing.
