Step by Step Method

Step 1

Heat oven to 350

Step 2

Combine the Guinness and the butter, chopped into 1-inch chunks, in a large sauce pan, and heat to melt the butter. Remove from heat, and whisk in the cocoa and sugar.

Step 3

In a bowl, whisk the sour cream with the eggs and vanilla, then add to the beer mixture. Sift together the flour and baking soda, and fold into the batter. Pour into muffin molds and bake for 25 minutes, or until inserted cake tester comes out clean. Let stand 10 minutes, remove from muffin tin, and cool completely on a rack.

Step 4

Using a mixer, whip cream cheese until smooth, sift in sugar, and beat. Add milk, and beat until smooth. Spread glaze over cooled cupcakes.

Note: make the glaze thicker or thinner by adding or subtracting milk

The cupcakes were tasty, but didn't like the glaze. I would have preferred a buttercream frosting. Also, I didn't realize the tins were supposed to be the large muffin type. I used a cupcake tin and had cut recipe in half, so I got 6 cupcakes and a small cake. Actually, I will use the batter recipe next time to make a large bundt cake and skip the glaze, which is very sticky.

We really loved the deep rich chocolate flavor of these cupcakes. Easy to make. We had trouble with the icing. It was too runny and we wound up adding a lot more powdered sugar to make it work.

Made for the FYC Tag Game, these may be the best cupcakes I've ever eaten. They're rich w/choc flavor & moist w/a perfect texture. I could've eaten the whole batch, speaking of which - I made a half batch, but my paper liners were sml so I still got 12 cupcakes + a sml cake ideal for 2 to share. I wavered about the glaze & opted to dust the sml cake w/powd sugar. I made the glaze for the cupcakes & at the last moment added chocolate syrup to it. The color looks caramel in the pic, but is really a light choc brown. 8 of the cupcakes are now frozen for a spec occasion. Thx for sharing this fabulous recipe. :-)
