Step by Step Method
Step 1
In a bowl combine the flour, salt and cayenne together along with any extra spices that you choose to add in.
Step 2
Add in melted butter and egg, then gradually mix in the beer.
Step 3
Gently add in the beaten egg white stirring only until smooth.
Step 4
Let stand for 1 hour in a warm place (your kitchen counter will do fine).
Step 5
In a deep fryer or heavy pot heat oil to 375 degrees F.
Step 6
Dip fish in batter then fry in hot oil until golden brown (fry the fish in batches).
Step 7
Allow to drain on a heavy brown paper bag or on double paper towels.
