Ingredients

The ingredients are:
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon seasoned salt (can use white salt, the seasoned salt is better)
  • 1/4 teaspoon cayenne pepper (optional or adjust to taste)
  • 1 tablespoon melted butter
  • 1 egg, beaten
  • 1/2 cup beer (preferably dark beer)
  • 1 egg white (stiffly beaten)
  • 2 pounds fish fillets

How to Make

  • Step 1: In a bowl combine the flour, salt and cayenne together along with any extra spices that you choose to add in.

  • Step 2: Add in melted butter and egg, then gradually mix in the beer.

  • Step 3: Gently add in the beaten egg white stirring only until smooth.

  • Step 4: Let stand for 1 hour in a warm place (your kitchen counter will do fine).

  • Step 5: In a deep fryer or heavy pot heat oil to 375 degrees F.

  • Step 6: Dip fish in batter then fry in hot oil until golden brown (fry the fish in batches).

  • Step 7: Allow to drain on a heavy brown paper bag or on double paper towels.
