Step by Step Method

Step 1

Cook ground beef and onion in a large skillet, breaking up the pieces of meat as you brown it. Add the minced garlic, cooking for another minute.

Step 2

Next, mix in the beef broth, tomato sauce, and water. Bring to a boil.

Step 3

Stir in the rest of the ingredients. Reduce the heat and simmer everything for 45 to 50 minutes. The barley should be tender and most of the liquid should be soaked up.

Step 4

Each serving is 1 1/3 cups.

This is a lovely dish for a winter weeknight. It’s hearty, but not heavy, relatively healthy, and delicious. Because my family is used to having barley mostly in soup and occasionally in a side dish, when I told them what I was making, they kept on asking me to describe it, so I told them to imagine pasta (like orzo or couscous) with ground beef and vegetables, except that it’s healthier than pasta. By gollie, I think that’s the perfect description. Because I described it to them as such, gave them the option to add some parmesan over the top. Love barley and as part of a main dish, it’s very good. Thank you, WAIGEN, for sharing. Made it “For your Consideration” tag game.

Very good and so easy too! Made as directed except I skipped the tomato as my can of tomato sauce was bigger than mentioned. This makes a lot! Thanks for sharing!

I had MAGICAL results with this recipe... my kids have been super picky lately and I wasn't sure how well this would be received. I don't think I've ever served them barley (except maybe in a soup?) but I thought this sounded good and affordable and relatively healthy so I gave it a shot. My son whispers to me, as he eats his THIRD helping, "mama, I LOVE barley," which was almost as shocking as my daughter telling me, "the only thing I would change is to add MORE zucchini!" No left-overs (and it made plenty for a family of four) and rave reviews all around. I'm so happy I tried this recipe and plan to make it again!
