  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 can (14.5 ounces) low-sodium beef broth
  • 1 can (8 ounces) tomato sauce
  • 1 cup water
  • 2 carrots, chopped
  • 1 tomato, seeded and chopped (small tomato)
  • 1 zucchini, chopped (small zucchini)
  • 1 cup barley (medium pearl barley)
  • 2 teaspoons Italian seasoning
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

How to Make

  • Step 1: Cook ground beef and onion in a large skillet, breaking up the pieces of meat as you brown it. Add the minced garlic, cooking for another minute.

  • Step 2: Next, mix in the beef broth, tomato sauce, and water. Bring to a boil.

  • Step 3: Stir in the rest of the ingredients. Reduce the heat and simmer everything for 45 to 50 minutes. The barley should be tender and most of the liquid should be soaked up.

  • Step 4: Each serving is 1 1/3 cups.
