Step by Step Method

Step 1

Place meat, water, barley, salt and pepper in dutch oven.

Step 2

Cover tightly and cook slowly 1 hour.

Step 3

Remove meat and cut up and return to pot.

Step 4

Add remaining ingredients and bring to a boil.

Step 5

Reduce heat and simmer about 45 minutes.

I chose this recipe because it has cabbage in it. I have never done beef barley soup with cabbage as an ingredient. This took the recipe up a notch or two for me! I only used two Tbsp. of the tomato paste, to give it a bit more depth. For my preference, I think the whole can would a been a bit much. This will definitely be a "go to" recipe for me this fall and winter. Thanks for sharing such a simple yet delicious soup recipe!
