Barefoot Contessa's Pound Cake Loaf

"I had some extra butter I wanted to use up so I chose to make a pound cake, this one is from Ina Garten/Barefoot Contessa, and oh man this is a great pound cake! I added in the zest of two small lemons and a small kid-size plastic cup of applesauce for extra moisture. This recipe makes two loaf cakes, I chose to divided the batter between four 5 1/2 x3 x 2 1/14 inch mini loaf pans, I find that with the longer baking time in a larger loaf pan it causes the outside of the cake to get too browned and some even burnt, my mini loaves turned out very well with less baking time. Makes two loaves."

Step 1

Preheat the oven to 350 degrees F.

Step 2

Grease and flour two 8 1/2 by 4 1/2 by 2 1/2-inch loaf pans (I used four mini loaf pans). Line the bottoms with parchment paper.

Step 3

Cream the butter and granulated sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, or until light and fluffy. With the mixer on medium speed, beat in the eggs, 1 at a time.

Step 4

In a large bowl, sift together the flour, baking powder, baking soda, and salt. In another bowl, combine the buttermilk and vanilla. Add the flour and buttermilk mixtures alternately to the batter, beginning and ending with the flour. Divide the batter evenly between the pans, smooth the tops, and bake for 45 minutes to 1 hour, until a cake tester comes out clean.

Step 5

When the cakes are done, let them cool for 10 minutes. Take them out of the pans, place them on a baking rack and allow them to cool completely. Wrap well, and store in the refrigerator.

No special items needed.



Very good pound cake! I used almond extract instead of the vanilla and no lemon but otherwise made as directed. We made one regular size loaf and two mini loaves. Thanks for sharing!
