"These are a great side to serve with any meat. The balsamic vinegar makes these so tasty. Depending on the size of potatoes used, this may take less or more time, check them after 1 ½ hours to be sure."

Step by Step Method

Step 1

Heat oven to 350 degrees Fahrenheit.

Step 2

Place potatoes cut side down in a buttered baking dish, just big enough to hold them.

Step 3

Sprinkle chopped onion over top.

Step 4

Pour melted butter and vinegar over potatoes; season with salt and pepper.

Step 5

Tuck sprigs of lemon thyme around potatoes.

Step 6

Cover dish with aluminum foil and bake for 2 hours, turning potatoes over during last half hour to coat with butter and vinegar.

Step 7

Potatoes and onions should be a deep golden brown.

The balsamic infused it’s deliciousness into these potatoes, making it yummy. They came out ever so tender and buttery and all ingredients as a whole made it well balanced. I will make these again and I’m curious as one of the other reviewers commented that rosemary was used and I think I’ll try that and maybe I’ll try both thyme and rosemary, why not, I’m sure it’ll taste wonderful. OMG! This potatoes are amazing. The sweetness of the balsamic and the onions covered with sublime buttery's an explosion of flavor in your mouth.

Wonderful potatoes! These potatoes had a great roasted rich flavor from the balsamic vinegar and the onions were great too. Didnt have the lemon thyme so I just sprinkled kosher salt and fresh ground pepper over everything. Want to find the lemon thyme and make these again. I made these yummmy taters tonight along with my Greek omelette, I didn't have the thyme so I had to omit it, loved the balsamic vinegar it really brought out a wonderful flavor, thanks for posting this great recipe Beatrice!
