Step 1: Heat oven to 350 degrees Fahrenheit.
Step 2: Place potatoes cut side down in a buttered baking dish, just big enough to hold them.
Step 3: Sprinkle chopped onion over top.
Step 4: Pour melted butter and vinegar over potatoes; season with salt and pepper.
Step 5: Tuck sprigs of lemon thyme around potatoes.
Step 6: Cover dish with aluminum foil and bake for 2 hours, turning potatoes over during last half hour to coat with butter and vinegar.
Step 7: Potatoes and onions should be a deep golden brown.
