  • 4 potatoes (new potatoes, cleaned and cut in half)
  • 1 medium yellow onion, chopped fine
  • 2 tablespoons butter, melted
  • 3 tablespoons balsamic vinegar
  • Salt and pepper, to taste
  • 6 sprigs, lemon thyme

How to Make

  • Step 1: Heat oven to 350 degrees Fahrenheit.

  • Step 2: Place potatoes cut side down in a buttered baking dish, just big enough to hold them.

  • Step 3: Sprinkle chopped onion over top.

  • Step 4: Pour melted butter and vinegar over potatoes; season with salt and pepper.

  • Step 5: Tuck sprigs of lemon thyme around potatoes.

  • Step 6: Cover dish with aluminum foil and bake for 2 hours, turning potatoes over during last half hour to coat with butter and vinegar.

  • Step 7: Potatoes and onions should be a deep golden brown.
