Step by Step Method

Step 1

Using electric mixer, beat first 5 ingredients (butter thru cayenne) in medium bowl until fluffy. (Can be made 3 days ahead. Cover and refrigerate. Bring to room temperature before using.)

Step 2

Preheat oven to 400 degrees. Line large baking sheet with foil.

Step 3

Place yams on sheet; bake until tender, about 1 hour 10 minutes.

Step 4

Slit each yam lengthwise. Spoon 1 tablespoon butter into each.

Step 5

Serve, passing remaining butter separately.

Really tasty made for one , cinnamon and chili powder go ery well together with the potato

Daily Inspiration

Made these yummy baked sweet potatoes last night to go with our veggie meal. Loved the taste of the chili powder and cinnamon together. I also added a touch of brown sugar just to offset the bitterness of the chili power. I also used Ancho chili powder which has a more subtle taste than regular chili powder.
