The ingredients are:
  • 1/2 cup unsalted butter (room temperature, 1 stick)
  • 1 tablespoon chili powder (New Mexico chili powder)
  • 2 teaspoons chili powder (New Mexico chili powder)
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 3 pounds sweet potatoes (6 sweet potatoes)

How to Make

  • Step 1: Using electric mixer, beat first 5 ingredients (butter thru cayenne) in medium bowl until fluffy. (Can be made 3 days ahead. Cover and refrigerate. Bring to room temperature before using.)

  • Step 2: Preheat oven to 400 degrees. Line large baking sheet with foil.

  • Step 3: Place yams on sheet; bake until tender, about 1 hour 10 minutes.

  • Step 4: Slit each yam lengthwise. Spoon 1 tablespoon butter into each.

  • Step 5: Serve, passing remaining butter separately.
