Step 1

Preheat oven to 400 degrees F.

Step 2

Divide the sweet potato slices between two rimmed baking sheets and drizzle the olive oil over the top of the potato slices. Toss. Spread potatoes in a single layer.

Step 3

Bake for 20-25 minutes or until golden brown, turning them once during cooking.

Step 4

Sprinkle with salt.

Love sweet potatoes and this recipe makes them shine. Not all the chips crisped up, but it has alot to do with uneven thickness, plus sweet potatoes are harder to crisp then regular. I added a very light sprinkling of demarara sugar towards the end (1/8 tsp). We liked this alot and will be making again. Than you, ellie, for sharing!
