"I really love zucchini sticks. And this is a nice alternative to the breaded one. I serve these with homemade ranch dressing. These are completely addicting. I have put that it serves 4, but it all depends on the size of zucchini you use and if it is an appy or a side."

Step by Step Method

Step 1

Preheat oven to 350F.

Step 2

Coat a cooling rack with non stick spray and place on baking sheet; set aside.

Step 3

In a small bowl, combine Parmesan, thyme, oregano, basil, garlic powder, salt and pepper to taste.

Step 4

Place zucchini on prepared rack.

Step 5

Drizzle with olive oil and sprinkle with Parmesan mixture.

Step 6

Bake for about 15 minutes or until tender.

Step 7

Then broil for 2-4 minutes or until crispy and golden brown.

Step 8

Garnish with chopped parsley, if desired.

Step 9

Serve immediately with ranch dressing or dip of your choice.

I used very large zucchini for this recipe so I cut the strips about the size of french fries and followed instructions as listed. They turned out perfectly delicious! Thx for sharing your recipe with us.

These are very good -- I only used 3 zucchini but these made a lot of zucchini sticks which we enjoyed. I skipped the thyme and parsley, but otherwise made as directed Delicious and enjoyed by all. Thanks for sharing!
