"Baked Beans in Maine is an every Saturday night tradition. We have them along with a potato salad or cole slaw, and hotdogs of some kind. We always have cornbread or biscuits, too. It is the best supper of the week for us. I have had this every week since I was a little girl as this was the tradition of my mom and grandmother. My husband's family had the same eating habits. This recipe uses four kinds of beans, but it can be made with just one kind if you choose and will be as good as if you used four. Until two years ago I always did the proper thing and baked them in my brown bean pot in the oven (I have five pots--all sizes). This past year I tried the crock pot and it works fine (just allow a little more time for the crockpot--I boil them a little longer, too). I always make a double batch. You can freeze them. My husband likes beans for breakfast on Sunday morning. It is all tradition, I guess. His family did this."

Step 1

Pick over the beans and wash in cold water several times; cover with cold water and let soak overnight.

Step 2

In the morning drain them, put in pan, and cover with water and parboil till the skins crack and roll up when you blow on them---35-40 minutes or so.

Step 3

Place onion in the bottom of the bean pot and add the beans saving some of the bean juice to mix with the rest of the ingredients if necessary.

Step 4

In a small bowl mix the minced dry onion, sugar, molasses, salt, dry mustard, and some of the hot bean water to make about 1 1/2 cups; pour this over the beans and mix gently; if you need more liquid, add more from the bean water.

Step 5

Scrape and slit the salt port and put on top of the beans; put cover on bean pot and bake at 300 degrees for about 7 hours or so, adding water if necessary to keep the beans covered.

These baked beans are like grandma used to make on Saturdays. Great side with burgers and dogs!
