"These are just so good served with a grilled steak. How can you go wrong with potatoes and bacon? The potatoes are sliced and stuffed with onion slices which get almost "mushy," and falling apart which adds such a great savory taste to these potatoes. Bake and serve with sour cream or cheese if you want. Decadent."

Step by Step Method
Step 1
Potatoes ... Wash your potato good, then cut your potato lengthwise creating a top and bottom piece. Using a fork or knife, poke the top half of the potato several times. This will allow some of the bacon drippings to get into the potato.
Step 2
Onions and Bacon ... Season the bottom half of the potato with salt and pepper, then, lay down 3 onion slices, and season once again; finally top with the other half of the potato. To keep the top and bottom together so the onion slices don't fall out, secure with a couple of toothpicks. Wrap the bacon slices around the potato to hold everything together. It will take 3 or 4 slices depending on the size of your potato.
Step 3
Bake ... Oven at 350 degrees, middle shelf. I prefer to use a sheet pan lined with parchment paper, but you could use foil or a baking rack too. Approximately 1 hour, it will depend on the size of the potato.
Step 4
Serve ... Sour cream or cheese on the side, ENJOY!
