Bacon Pistachio Crusted Scallops

Combine the bacon, pistachios, green onions and rosemary in a small food processor (or blender).
Blend for 10-15 seconds, or until well combined.
Place the mixture on a plate or in a shallow bowl.
Sprinkle both sides of each scallop with salt and pepper.
Coat each side of the scallop with the bacon pistachio mixture.
Place that skillet with the reserved bacon fat back on the stove top over medium heat and add the scallops.
Cook for 3-4 minutes per side. Transfer to plates and sprinkle with the optional chopped scallions or parsley.
Yield: 10-15 scallops
