Ingredients

The ingredients are:
  • 8 ounces sliced bacon (8 strips, cooked & crumbled – reserve a small amount of bacon grease in the pan & set aside)
  • 1/4 cup pistachio nuts
  • 1 tablespoon green onions
  • 1 tablespoon fresh rosemary
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 1/2 pounds scallops (to equal 12-15 large scallops)
  • Chopped scallions or parsley to sprinkle over finished product (optional)

How to Make

  • Step 1: Combine the bacon, pistachios, green onions and rosemary in a small food processor (or blender).

  • Step 2: Blend for 10-15 seconds, or until well combined.

  • Step 3: Place the mixture on a plate or in a shallow bowl.

  • Step 4: Sprinkle both sides of each scallop with salt and pepper.

  • Step 5: Coat each side of the scallop with the bacon pistachio mixture.

  • Step 6: Place that skillet with the reserved bacon fat back on the stove top over medium heat and add the scallops.

  • Step 7: Cook for 3-4 minutes per side. Transfer to plates and sprinkle with the optional chopped scallions or parsley.

  • Step 8: Yield: 10-15 scallops
