Step 1: Combine the bacon, pistachios, green onions and rosemary in a small food processor (or blender).
Step 2: Blend for 10-15 seconds, or until well combined.
Step 3: Place the mixture on a plate or in a shallow bowl.
Step 4: Sprinkle both sides of each scallop with salt and pepper.
Step 5: Coat each side of the scallop with the bacon pistachio mixture.
Step 6: Place that skillet with the reserved bacon fat back on the stove top over medium heat and add the scallops.
Step 7: Cook for 3-4 minutes per side. Transfer to plates and sprinkle with the optional chopped scallions or parsley.
Step 8: Yield: 10-15 scallops
