Step by Step Method

Step 1

Put potatoes in saucepan and cover with water plus 2 inches; bring to a boil. Reduce heat and simmer for 15-20 minutes or until tender.Drain.

Step 2

Place potatoes in a serving dish and add reminder of the ingredients; toss.

Awesome potatoes! I knew when I read the ingredients that this would be a wonderful recipe. I made as written with one change, I used dried thyme. Mixed up the mixture and let it sit until I steamed the potatoes. Served this with rainbow trout and asparagus. Made for a delicious dinner. Thank you so much for sharing your keeper recipe Ellie!

Thank you for sharing this lovely recipe ellie. The small lemon potatoes were excellent. We enjoyed them very much. They were tender and full of flavor. Love the thyme and lemon combo.

Yummy lemon potatoes. I did have to separate them....served some with just butter, salt and pepper for those who weren't adventurous. But I really enjoyed the lemon and thyme flavor. Think these would be especially good with fish. Thanks for sharing!
