Step by Step Method

Step 1

Sift the flour, baking powder and salt into a bowl, and stir in the sugar.

Step 2

Using your fingertips, lightly work in the butter until the mixture resembles breadcrumbs. At this point, you can add the raisins if you choose to include them.

Add the egg, cream and enough milk to moisten. Mix well until it has a soft doughy texture – but it shouldn’t be too moist.

Gather the dough into a ball and turn it out onto a floured surface,

Then roll lightly with a rolling pin to 1 inch/2.5cm thick. Cut out with a round cutter, transfer to a greased baking sheet and brush the tops with the egg glaze.

Step 6

Bake in the oven preheated to 350F/180c/Gas mark 4 for 15-20 minutes

These are wonderful and also easy to make. I had some double cream so was looking for another way to use it and I found this recipe and was not disappointed. We made 15 scones using a coffee cup for cutting out the scones. Delicious! Thanks for sharing!

I didn't get to make these for St Patrick's Day as I was a little under the weather so I made them this morning. They made up easily and I tried not to handle the dough too much and it worked! They were light and tender and hit the spot with a cup of tea! I had mine with some homemade strawberry jam that I got from the Farmer's Market. So good!
