Step 1

FOR THE SAUCE - combine all the ingredients for the sauce in a small bowl and mix to blend.

Step 2

Heat a frying pan on high heat with oil and once the pan is hot, add the garlic, ginger and white part of the spring onions to the frying pan and stir fry for a few seconds or just until fragrant and then add the mince, breaking into small pieces, and sautee until almost cooked through.

Step 3

Add the vegetables and sauce to the frying pan and cook for 2 to 3 minutes and immediately remove the frying pan from the heat and serve the filling in lettuce cups or over rice.

What yummy flavors this has...I reduced the recipe down to 2 veggies were thinly sliced red bell peppers and grated can't see the carrots at all so next time I will just julienne them so there will be a nice crunch...I served it in butter lettuce...made for FYC tag game...
