Ingredients

The ingredients are:
  • 1 box (19.5 ounce) yellow cake mix
  • 3/4 cup oil (cooking oil)
  • 1 can (5 1/2 ounce) apricot nectar
  • 4 egg yolks
  • 2 teaspoons lemon extract
  • 4 egg whites
  • FOR THE GLAZE
  • 1 lemon
  • 1 1/2 cups powdered sugar

How to Make

  • Step 1: Put cake mix, oil, apricot nectar, egg yolks and lemon extract into mixing bowl. Beat at low speed for approximately 5 minutes.

  • Step 2: Beat egg whites until stiff; fold into cake mixture.

  • Step 3: Bake in greased tube pan in 350-degree oven 40 to 45 minutes.

  • Step 4: Remove cake from pan and apply topping while cake is still warm.

  • FOR THE TOPPING

  • Step 5: Beat the grated rind and juice of 1 lemon with 1 1/2 cups powdered sugar until smooth. (If mixture is too thin, add extra sugar.) Spread over top and sides of warm cake.
