Preheat oven to 350f.
In a large bowl, combine the flour, confectioners sugar and baking soda - then add the almonds and granulated sugar.
Cut in butter with a pastry blender, or 2 knives until the mixture resembles coarse crumbs.
Add the egg yolks, vanilla and cinnamon- blend well.
Gather dough into a ball, then roll out into 1/4" thickness.
Cut out cookies with a floured 2" round cookie cutter.
With a floured thimble, cut out centers of HALF the cookies.
Brush cookies with beaten egg .
Place on greased baking sheet, and bake for about 18 minutes, until golden.
Remove cookies to wire racks to cool and when cool, spread jam on whole cookies, top with cut-out cookies.
