Step 1: Preheat oven to 350f.
Step 2: In a large bowl, combine the flour, confectioners sugar and baking soda - then add the almonds and granulated sugar.
Step 3: Cut in butter with a pastry blender, or 2 knives until the mixture resembles coarse crumbs.
Step 4: Add the egg yolks, vanilla and cinnamon- blend well.
Step 5: Gather dough into a ball, then roll out into 1/4" thickness.
Step 6: Cut out cookies with a floured 2" round cookie cutter.
Step 7: With a floured thimble, cut out centers of HALF the cookies.
Step 8: Brush cookies with beaten egg .
Step 9: Place on greased baking sheet, and bake for about 18 minutes, until golden.
Step 10: Remove cookies to wire racks to cool and when cool, spread jam on whole cookies, top with cut-out cookies.
