Ingredients

The ingredients are:
  • 2 cups all purpose flour
  • 1/2 cup confectioner's sugar
  • 1/4 teaspoon baking soda
  • 1/4 cup ground almonds
  • 1/4 cup granulated sugar
  • 1/2 cup butter (chilled and cut into 1" pieces)
  • 2 egg yolks (lightly beaten)
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon cinnamon
  • 1 large egg (lightly beaten, additional)
  • 1/2 cup apricot jam (or preserves)

How to Make

  • Step 1: Preheat oven to 350f.

  • Step 2: In a large bowl, combine the flour, confectioners sugar and baking soda - then add the almonds and granulated sugar.

  • Step 3: Cut in butter with a pastry blender, or 2 knives until the mixture resembles coarse crumbs.

  • Step 4: Add the egg yolks, vanilla and cinnamon- blend well.

  • Step 5: Gather dough into a ball, then roll out into 1/4" thickness.

  • Step 6: Cut out cookies with a floured 2" round cookie cutter.

  • Step 7: With a floured thimble, cut out centers of HALF the cookies.

  • Step 8: Brush cookies with beaten egg .

  • Step 9: Place on greased baking sheet, and bake for about 18 minutes, until golden.

  • Step 10: Remove cookies to wire racks to cool and when cool, spread jam on whole cookies, top with cut-out cookies.
