"A KC favorite! No need for frosting just top each slice with a couple tablespoons of sweetened whipped cream. If you are using sweetened applesauce I suggest to reduce the sugar slightly, this also make great cupcakes"

Step by Step Method

Step 1

Preheat oven to 350 degrees F. Grease a 13 x 9-inch baking pan.

Step 2

In a medium bowl sift together flour, baking soda, baking powder, salt and spices.

Step 3

In a large bowl cream together the shortening and brown sugar and white sugar together until light and fluffy (about 3-4 minutes). Add in the eggs to the creamed mixture, beating well after each addition. Add in the dry ingredients alternately with the applesauce and diet 7-Up.

Step 4

Stir in raisins and nuts.

Step 5

Pour into prepared baking pan.

Step 6

Bake for 40-45 minutes, or until cake tests done.

Step 7

Cool then dust with confectioners’ sugar or serve topped with whipped cream.
