Step 1: Preheat oven to 350 degrees F. Grease a 13 x 9-inch baking pan.
Step 2: In a medium bowl sift together flour, baking soda, baking powder, salt and spices.
Step 3: In a large bowl cream together the shortening and brown sugar and white sugar together until light and fluffy (about 3-4 minutes). Add in the eggs to the creamed mixture, beating well after each addition. Add in the dry ingredients alternately with the applesauce and diet 7-Up.
Step 4: Stir in raisins and nuts.
Step 5: Pour into prepared baking pan.
Step 6: Bake for 40-45 minutes, or until cake tests done.
Step 7: Cool then dust with confectioners’ sugar or serve topped with whipped cream.
