"This is a modified version of a recipe from Jane Brody of the New York Times. The wet and dry ingredients can be mixed separately the night before, refrigerating the wet ingredients overnight."

Step by Step Method
Step 1
In large bowl, beat together the first 4 ingredients.
Step 2
In a medium bowl, combine the two flours, baking powder, baking soda, cinnamon, and nutmeg after sifting.
Step 3
Add these to the applesauce mixture, mixing just enough to moisten the dry ingredients.
Step 4
Add raisins.
Step 5
Divide the batter among 12 greased muffin cups.
Step 6
Bake in preheated 375' oven 20 minutes. Do not overbake. Use a toothpick to test for doneness.
