"Apples and creamy caramel in a flaky cobbler crust. Yes please! You can make early in the day and bake it right before dinner. Use my mom's pie crust recipe, or if you're a beginner, my sister Lauren's, both under my recipes. It will take a double pie crust recipe."

Step 1

First, prepare pie dough, three times, flattening each disk, wrapping in saran wrap and refrigerating. It's best to prepare three separate batches than one big batch.

Step 2

Preheat oven to 350 degrees and grease a 9 x 13 pyrex dish with butter-flavored shortening.

Filling:

Place apple and lemon juice in heavy pot. As you slice apples, add them to pot, tossing as you go, to keep them from browning.

Step 5

Whisk dry ingredients together, add to pot along with butter and cream. Bring to a good simmer over medium-high heat, stir, bring to a good simmer once more. Remove from heat.

Step 6

Crust:

Meanwhile remove first pie dough from fridge, place on floured surface and roll into a rectangle 13" long. Slice into 1 1/4 inch strips. Criss-cross strips on bottom and around sides of pyrex pan. When first dough used up, roll out second in same manner, using it to finish bottom and sides, but saving some for top.

Pour apples into pyrex. Stir pecans and sugars together and sprinkle over apples.

Step 10

Roll out third pie dough and place strips of dough criss-crossed over top of apples. Brush strips with egg white and sprinkle with crystallized sugar and cinnamon. Bake for one hour.

Sweet and delicious about sums up this extra special cobbler. Great time to have them, when the apples just came off the tree. A scoop or two of ice cream always makes it better!
