Green Bell Peppers - I have a LOT.

I need recipe suggestions for green bell peppers. I have over a bushel and a half that I picked yesterday before we were to get a frost this morning (Nov 1, 2014). I have already made 16 stuffed bell peppers and put many (slightly dehydrated and coated in Olive Oil in the freezer). I have so many more that I would like to use in a few recipes for our church Fall bake sale this Tuesday. I cannot find a recipe for green pepper soup that sounds good - please no stuffed or jelly
recipes. Help if you can. Thanks Helen in Ark.

While I appreciate the suggestions so far - they are not what I need. I have already but as many peppers in the freezer as I might need. Also, I have a way to do it that is much better than just cutting and freezing. I cut in large chunks and dehydrate them for about 30 minutes in a 275 degree oven - let cool - place in zip lok bag with about a Tbsp of olive oil. They are more like fresh when you need to use them - not mushy.

I have way over a bushel of green peppers now to use - I was hoping for a recipe or two that would use a lot of them - not just 1-3 per recipe. I do thank you for your posts and I am eager to see more.

I always take my last peppers, sit at the table and chop them up and put them in zip-lock freezer bags to use in cooking during the winter months. Of course they wouldn't be good for raw pepper recipes. But great in omelets, soups, pepper steak, etc.

Yes, I was going to say same as lovin, cut them up and lay them flat on a jelly roll pan, let them freeze, then remove them from the pan and place in a ziploc bag. So easy to dip into for a recipe. The reason you freeze on a jelly roll pan is they freeze individually, that way you can pick out a handful you want and not have to chip off a section. If you cut them up and just throw them in a bag, they will all freeze in a huge ball.

Same here.

I make my onion pepper blend which I use all the time.
I simply chop up peppers, onions; and, sometimes celery. Just freeze on a sheet pan, then bag up. Great to use for just about anything. You can do all peppers too.

Cut in thin strips; they work great for stir fry and on pizza or in sandwiches too.

That is all I can think of.

I'd freeze them the way Dissie described.

As for uses that use a lot of green pepper. there is soup, stew, fajitas, curries, add them to prepared salads like 3 bean salad, peperonata, etc.

I know this is way too late, but if your in the same situation next year, Just bring the peppers to the bake sale. I am pretty sure the bake sale police won't mind the selling of fresh home grown veggies to those of us not blessed with garden space.
