"Looking for something just a little differfent to make for a lovely appetizer? Man Oh Man are these GOOD! Everyone goes nuts over these tasty little morsels! If I am making this dish just for myself, I don’t drain the shrimp. I let it marinate in the sauce in the refrigerator, and take out what I want and keep the rest in the refrigerator. They never stay in the refrigerator long though. Preparation time does not include the cleaning and deveining of the shrimp. "

Step by Step Method

Step 1

Mix sauce with electric mixer about 5 minutes before pouring over shrimp.

Step 2

Shell and devein shrimp. Cook shrimp in water until they just turn pink, 1-2 minutes. Don’t overcook.

Step 3

Put cooked shrimp, raw onion slices, and Bay leaves in a container.

Step 4

Pour sauce over all. Fold gently to incorporate the sauce evenly.

Step 5

Cover the container, and let it remain in the refrigerator at least 24 hours. (It is not necessary, but I do stir them once or twice in the 24-hour period. It is an excuse to sample one).

Step 6

Before serving, drain the sauce. Put drained shrimp in serving dish.

Step 7

Sprinkle with parsley flakes, if desired.

Step 8

Serve with crackers.

I made this as written including using apple cider vinegar. I had some cooked shrimp in the freezer so used those rather than cooking raw shrimp. The shrimp were very good but I think DH and I prefer that there not be so strong a tomato flavor. I wish I had made these when there were more people to sample the shrimp. This is an excellent recipe for entertaining.

I made these to have when my sister and family were coming up for the holidays. They are so very delicious! We ate them all and they were so good I made up another batch to have tonight for New Years as we watch the ball drop!

Here in Maine we get fresh shrimp off the boat and I was searching here for something different to have. I made a double batch to feed my family of 13 when the kids and grandchildren are here for the day. They went crazy for these and the bowl was empty at cleanup time! Now a favorite me and my daughters will be making these a lot!
