  • When selecting the type of meat, make sure to use only one of the three types listed.
  • If using a type of meat other than salt pork, add salt to taste.

  • For the meat, use ground beef or chorizo instead of saltpork, ham hock, or diced bacon. The benefit of this substitution is that ground beef and chorizo are more widely available than saltpork, ham hock, or diced bacon, so it is easier to find these ingredients. The flavor of ground beef and chorizo will also add a unique flavor to the dish that the other meats may not provide.
  • For the beans, use black beans instead of pinto beans. The benefit of this substitution is that black beans are more widely available than pinto beans, so it is easier to find these ingredients. The flavor of black beans will also provide a different taste to the dish than pinto beans would.

Vegetarian Variation Replace the meat with a block of firm tofu, cut into cubes and sautéed in a tablespoon of oil until lightly browned. Add to the beans and follow the recipe as written.

Mexican Variation Replace the ground beef with chorizo sausage, diced and cooked until lightly browned. Add a can of diced tomatoes and a tablespoon of chili powder to the beans and follow the recipe as written.

Mexican Rice: Mexican Rice is a perfect accompaniment to Zr Frijoles and adds a delicious flavor. Its simple ingredients of rice, onion, garlic, tomato, and cilantro make it a great pairing with the beans. The combination of flavors will complete any Mexican meal.

Grilled Mexican Street Corn: Grilled Mexican Street Corn is the perfect side dish to Mexican Rice. Its smoky and spicy flavors are a great complement to the mild flavors of the Mexican Rice. The combination of the creamy corn, tangy lime juice, and spicy chili powder will add a delicious kick to any Mexican meal.
