"This is from another website. These are wonderful with anything.I have made this recipe with thicker potato slices- it takes a bit longer to cook, the potatoes tend to fall apart a bit and you have to turn the potatoes a few times, but the taste is the same. I have posted this recipe as directed by the author, but in general, I use a bit more seasonings than are directed."

Step by Step Method

Step 1

Peel and slice the potatoes about 1/8" or thinner in diameter. Slice the onions very thin as well.

Step 2

In a wide non-stick frying pan, over medium high heat, melt the butter then add the olive oil.

Step 3

Add the sliced potatoes and onions-cover and let fry for 10 minutes.

Step 4

Using a spatula, turn the potatoes over so they do not break apart. Sprinkle with the seasonings and continue to fry, with the cover removed for another 5 minutes or until the potatoes are lightly browned underneath. If needed, turn the potatoes over occasionally.

Step 5

Add additional seasonings at the end.

The hubby and I both enjoyed these potatoes...we loved the addition or the garlic powder and dried dill weed...neither were overpowering the potatoes...but enhanced them...I cut the recipe down to serve one and there was plenty to serve the two of us...yum..made for "Aplhabet" tag game at FFF
