"This is from another website. These are wonderful with anything.I have made this recipe with thicker potato slices- it takes a bit longer to cook, the potatoes tend to fall apart a bit and you have to turn the potatoes a few times, but the taste is the same. I have posted this recipe as directed by the author, but in general, I use a bit more seasonings than are directed."

Step by Step Method
Step 1
Peel and slice the potatoes about 1/8" or thinner in diameter. Slice the onions very thin as well.
Step 2
In a wide non-stick frying pan, over medium high heat, melt the butter then add the olive oil.
Step 3
Add the sliced potatoes and onions-cover and let fry for 10 minutes.
Step 4
Using a spatula, turn the potatoes over so they do not break apart. Sprinkle with the seasonings and continue to fry, with the cover removed for another 5 minutes or until the potatoes are lightly browned underneath. If needed, turn the potatoes over occasionally.
Step 5
Add additional seasonings at the end.
