Step 1: Peel and slice the potatoes about 1/8" or thinner in diameter. Slice the onions very thin as well.
Step 2: In a wide non-stick frying pan, over medium high heat, melt the butter then add the olive oil.
Step 3: Add the sliced potatoes and onions-cover and let fry for 10 minutes.
Step 4: Using a spatula, turn the potatoes over so they do not break apart. Sprinkle with the seasonings and continue to fry, with the cover removed for another 5 minutes or until the potatoes are lightly browned underneath. If needed, turn the potatoes over occasionally.
Step 5: Add additional seasonings at the end.
