"These are just too easy. Three (3) ingredients, plus salt and pepper. Now, I used honey gold potatoes; they are very sweet, grape sized yellow potatoes. If you can't find these, a small red potato will work just as well. The smaller ... the better. Covered with cream, and topped with fresh herbs. I normally cook these on the grill in a aluminum pan or my cast iron skillet; but, these can also be done in the oven, or on the stove top. This will serve 2-4 people; and the recipe can easily be doubled."

Step by Step Method

Step 1

Potatoes ... Depending on how you decide to cook these. Add the potatoes to a small casserole dish, cast iron pan, or aluminum tin/pan. Then pour the cream over the top, and season with salt, pepper; finish with the fresh whole sprigs of herbs.

Step 2

Cooking ... On the grill, medium heat - they will take 20-25 minutes. Or in the oven at 425 degrees - they will take 15-20 minutes; and on the stove top, about the same as the grill 15-20 minutes on medium heat. The one thing nice about the grill is that they will get a nice smoky flavor. Just make sure to stir them often as they cook.

Step 3

Serve and ENJOY! ... Once the potatoes are tender and the cream has thickened and reduced; the potatoes are done. Remove the stems from the herbs and serve. You can always add diced bacon, cheese, or fresh herbs as a garnish; but, I prefer them as is. They are creamy and rich - and the perfect side dish.
