Step by Step Method

Step 1

Put oil in stock pot

Step 2

To pork add salt, black pepper to taste, and cumin.

Step 3

Brown on all side well

Step 4

Add water to top of meat

Leave uncoverd to braise

Bring to a boil on high, stir and leave uncovered

Step 7

Then get a large pot

Step 8

Add cornmeal, cover with water generously

(don't measure at this point we are just washing it), (i think you could skip this step they were washing out bugs and dirt)

Give it a good stir,

And wait 3 minutes or less for the cornmeal to settle at the bottom,

Then slowly and carefully pour most of the water out

After doing that add about 8 cups water,

Add salt,

Step 15

Add sugar

Put on the stove over high heat, stirring (whisking)constantly until it comes to a boil (this takes awhile)

Then lower heat to low and stir (with flat bottomed spatula)occasionally scraping bottom

Meanwhile

The pork will have cooked down close to devoid of water, allowing meat to brown all over,

Add your onion, garlic, and bell pepper

Step 21

Allow to cook down and stir the pork occasionally for about 8 minutes on medium high heat til onions are translucent and garlic very fragrant

Then add tomato

Stir

Letting cook an additional 2 minutes. Meanwhile

Step 25

Stir your cornmeal to make sure it doesn't stick to bottom of pot while you were doing all that.

Step 26

Add creamed corn to polenta ,cornmeal should be thick

Step 27

Now add your pork, onion, garlic, bell pepper, tomato and spice mixture you had all frying up together in the seperate pan to the cornmeal,

Step 28

Raise heat to medium and stir constantly for about 5 minutes, add salt to taste ,if needed.
