"I love sweet and sour recipes, this shrimp dish is awesome! I especially like it because it makes a quick easy week night meal, if you not a shrimp lover this can also be made with cubed raw chicken breast but it does need to cook a little longer than the shrimp, remember when you make this using shrimp it cooks in a matter of a few minutes and if overcooked gets very tough, if using chicken it will take about 10 minutes depending on the size of the cubes. Serve this with cooked rice"

Step by Step Method

Step 1

Marinade the shrimp in the soy sauce and oyster sauce while you prepare the vegetables.

Step 2

Chop up the onions into small pieces. Chop the carrot into small circles, very thin.

Step 3

Slice the sweet peppers into strips and cut in half if the pieces are too big.

Step 4

Cut the pineapple into large chunks.

Step 5

Remove the strings from the pea pods if you have them.

Step 6

Mix the sauce ingredients together. Set aside until ready to use.

Step 7

Add the oil to a saute pan. Add the shrimp and cook for about 2 - 3 minutes DO NOT cook the shrimp all of the way. Put on a plate while you prepare the rest.

Step 8

Add the onions, carrots and sweet pepper strips to the pan. Cook for several minutes until the start to wilt and the onion become transparent. Add the pineapple and pea pods to the vegetables. Cook for about 2 minutes, while the pineapple gets hot. Stir often.

Step 9

Add the shrimp back to the pan.

Step 10

Stir up the sauce ingredients. Pour into the pan and stir while the sauce thickens. When the sauce is thickened it's done. Serve over rice.
