Step by Step Method
Step 1
In a saucepan over medium heat add the sweet potatoes and enough water to cover the potatoes and then bring to a boil; reduce heat and cook uncovered for 10 minutes or until tender; drain.
Step 2
Meanwhile in a skillet over medium-high heat heat the oil and then add the couscous, onion and celery and saute until couscous starts to brown. Stir in seasonings (poultry seasoning - pepper) and broth and bring to a boil; reduce heat and simmer uncovered for 10 minutes or until tender.
Step 3
Stir in turkey, cranberries, orange zest and cooked sweet potatoes and cook covered over low heat until heated through. Sprinkle with parsley.
