Ingredients

The ingredients are:
  • 1 pound yams (this is about 2 sweet potatoes, peeled and cut into 3/4 inch cubes)
  • 1 tablespoon oil (canola oil)
  • 1 package (8.8 ounce) dry couscous (pearl)
  • 1/4 cup onion, chopped
  • 1/4 cup celery, chopped
  • 1/2 teaspoons poultry seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 29 ounces chicken broth (two 14 1/2 oz cans)
  • 2 ounces cooked turkey (chopped, this is about 2 cups cooked and chopped turkey)
  • 1/4 cup dried cranberries
  • 1 teaspoon grated orange zest
  • Parsley, chopped, garnish

How to Make

  • Step 1: In a saucepan over medium heat add the sweet potatoes and enough water to cover the potatoes and then bring to a boil; reduce heat and cook uncovered for 10 minutes or until tender; drain.

  • Step 2: Meanwhile in a skillet over medium-high heat heat the oil and then add the couscous, onion and celery and saute until couscous starts to brown. Stir in seasonings (poultry seasoning - pepper) and broth and bring to a boil; reduce heat and simmer uncovered for 10 minutes or until tender.

  • Step 3: Stir in turkey, cranberries, orange zest and cooked sweet potatoes and cook covered over low heat until heated through. Sprinkle with parsley.
