Step 1: In a skillet over low heat, add the butter and then add the sweet potatoes, garlic, 1/4 teaspoon salt and the thyme and cook, covered, for 5 minutes, stirring occasionally. Stir in spinach, cook for a few more minutes or until wilted.
Step 2: With the back of a spoon, make 4 wells in the potato mixture and then break an egg in each well. Sprinkle eggs with pepper and 1/4 teaspoon salt and then cook, covered on medium low heat until egg sets but not totally hard (5-10 minutes).
