"There is nothing fancy about steamed clams the Maine way. Just soak the clams in salted water with some cornmeal. They will cipher the cornmeal through them and get rid of some of the grit. Then scrub and steam them. Last of all, dunk in butter and enjoy. Muscles may be used in place of clams."

Step by Step Method

Step 1

In a large container place the gallon of water and salt; put clams in and sprinkle the cornmeal over it; place in refrigerator and let sit for about 20 minutes.

Step 2

Drain; with a stiff brush, scrub and clean the clams with cold water to get the grit off before cooking.

Step 3

Put about 1/2" to 1" of water in the bottom of a clam steamer or other pot; bring to a boil; place clams on steamer rack over the water; cover and steam for about 5-10 minutes only till shells open----DO NOT overcook.

Step 4

Discard any clams that don't open; dunk in butter and enjoy!

We love our lobsters and steamers during the summer here in Maine and we cook them the same way you do however we put ours in a crisper for a day or two sprinkled with cornmeal so the clams can clean themselves out of any sand and grit, and then we rinse them a couple of times in water before we steam them. They are so delicious and before the end of the summer we have them several times to get our fill for the season. For those who don't know how to make them, this is an easy recipe to follow.
