Ingredients

The ingredients are:
  • 5 to 6 pounds clams
  • 1 gallon water
  • 1/3 cup kosher salt
  • 1/3 cup cornmeal
  • Butter (to dunk them in)

How to Make

  • Step 1: In a large container place the gallon of water and salt; put clams in and sprinkle the cornmeal over it; place in refrigerator and let sit for about 20 minutes.

  • Step 2: Drain; with a stiff brush, scrub and clean the clams with cold water to get the grit off before cooking.

  • Step 3: Put about 1/2" to 1" of water in the bottom of a clam steamer or other pot; bring to a boil; place clams on steamer rack over the water; cover and steam for about 5-10 minutes only till shells open----DO NOT overcook.

  • Step 4: Discard any clams that don't open; dunk in butter and enjoy!
