Place the yeast and sugar in the bowl of a stand mixer and add the warm milk, stir to combine. Allow to sit until frothy.
Add the butter, egg, flour, and salt. Beat on low speed This dough will be very soft. Form into a ball. If too sticky to handle, add 1-3 more Tablespoons flour.
Place the dough into greased bowl, and cover. Place into a slightly warm environment to rise until doubled, roughly 60-90 min. (I leave my dough uncovered and place in the oven with a pot of boiled water.)
While dough is rising combine 1/2 cup sugar and 1 teaspoon cinnamon and set aside
Once dough has finished rising, preheat oven to 350°F
Punch down dough and place on a lightly floured surface. Divide dough into 4 equal portions. Roll each portion into a thin, 10-inch circle.
Place the bottom circle on a prepared baking sheet, spread with 1 tablespoon butter (leave edges clear of butter) and sprinkle 1/3 of the cinnamon sugar in buttered dough. Top with next round and repeat butter and cinnamon sugar. Repeat till all Rounds are used. Do not butter the last dough round. Press edges together and place a 3 inch round object or glass in the center and press to make an indent.
Using a sharp knife, cut 16 even strips. Using both hands, grab two strips and twist them away from each other twice, then press the two ends together to make a point. You should have 8 points on your star
Make egg wash by whisking egg and milk together. Brush star bread with egg wash and place in oven. Let bake for 25-30 minutes or until golden brown on top.
Remove from oven and let cool for 5 minutes. Enjoy while bread is still warm
