"I've used different brands of cherry balsamic vinegar and they seem to have varying levels of sweetness. If you want a sweeter dressing, add the honey (or whatever sweetener you prefer). I don't always add feta (depends on which picky eater is at the table). I've added bacon before, and that went well, but I didn't include it in the ingredients."

Step by Step Method

Step 1

Prepare the dressing: In a small bowl, whisk together the olive oil, cherry balsamic vinegar, dry mustard, optional honey, salt, and pepper until well combined. Set aside.

Step 2

In a large salad bowl, add the spring mix, fresh cherries, slivered almonds, and red onion. Toss gently to combine.

Step 3

Drizzle the cherry balsamic vinaigrette over the salad and toss well to coat all the ingredients evenly.

Step 4

Sprinkle with feta, if using.

Step 5

Season the salad with salt and pepper to taste.

Step 6

Serve immediately.

This is a lovely tasting salad and it was even better due to, as they say, the cherries on top. I didn't have cherry balsamic vinegar, but instead, used a combination of lavender balsamic and regular balsamic. Also, used toasted hazelnuts seeing I have it on-hand. Thank you, NE Lady, for sharing!
