Step by Step Method

Step 1

Cut peppers on a mandolin wearing 2 pairs of gloves and for heaven sakes don't rub face, anywhere! lol

Step 2

Put them in separate piles.

Step 3

Heat butter and oil.

Step 4

Add 4 separate piles (using gloves) of peppers so they stay by themselves in the pan.

Step 5

Season lightly.

Step 6

Put back on plate separately.

Step 7

Pour excess oil mixture in small bowl.

Step 8

Throw away gloves and wash hands.

Step 9

Beat the eggs seasoning to taste.

Step 10

Make 4 separate omelets using a 1/4 of all ingredients except hot sauce and chives

Step 11

Cook cheese and peppers on one side.

Step 12

Sprinkle hot sauce and chives on top.

Step 13

Add additional oil and butter as needed to pan for each additional omelet.
