"A lightning quick healthy and delicious dinner. I just tried it and next time will use a bit less sciracha and a crunchier lettuce leaf. Otherwise we really liked it"

Step 1

Mix sriracha, soy, brown sugar and fish sauce in a small bowl. Set aside

Step 2

Heat oil to medium heat, sauté scallions and garlic about three minutes

Step 3

Add chicken and season with salt. Break up and cook until no longer pink.y 5-7 minutes

Step 4

Add soy mixture and cook until reduced about two minutes

Step 5

Serve inside lettuce leaves with a squeeze of lime

We love lettuce wraps and this recipe is no exception! Like Teresa, I thought it would be too much, but we also managed to gobble it down. I'm not much of a salt person, and found it a little salty (but hubby did not), so in the future I'll not salt the chicken while it cooks, since the sauce is salty enough. I had a tablespoon or so of freshly minced ginger from another recipe, so I tossed it in as well, and used twice the amount of garlic. Delish! Served with chili oil and lime wedges that didn't make it into the picture. LOL.

I really thought that there would be too much meat mixture for just the two of us...but we gobbled it all up...we love spicy dishes...next time I'm going to add more of the Sriracha...we both felt it needed a touch more...I totally forgot the basil...won't do that again...made for FYC tag game...
