Step by Step Method
Step 1
Combine soy milk, cinnamon stick, cardamom pods and lemon peel in a medium saucepan and bring the mixture to a simmer and add the rice and raisins.
Step 2
Stir and cook partially covered over low heat, stirring occasionally for 20 to 25 minutes until the rice is tender and creamy.
Step 3
Add the caster sugar to the pan and stir through.
Step 4
Spoon pudding into bowls to serve.
