Ingredients

The ingredients are:
  • 4 cups soy beverage (gluten free, or gluten free rice milk)
  • 2 strips lemon peel (without pith 2cmx4cm)
  • 2/3 cup Arborio rice (or short grain rice)
  • 1/3 cup raisins (or sultanas)
  • 2 tablespoons caster sugar
  • 1 cinnamon stick
  • 4 cardamom pods

How to Make

  • Step 1: Combine soy milk, cinnamon stick, cardamom pods and lemon peel in a medium saucepan and bring the mixture to a simmer and add the rice and raisins.

  • Step 2: Stir and cook partially covered over low heat, stirring occasionally for 20 to 25 minutes until the rice is tender and creamy.

  • Step 3: Add the caster sugar to the pan and stir through.

  • Step 4: Spoon pudding into bowls to serve.
