Step 1

In large pot heat oil over medium heat; cook vegetables, garlic, chili pepper(if using) and seasonings, stirring occasionally until softened.

Step 2

Increase heat to medium high, add sausages breaking down with wooden spoon until no pink remains.

Step 3

Stir in remaining ingredients, bring to boil, reduce heat and simmer 15 to 20 minutes. (discard chili pepper before serving)

This is a hearty belly warming soup we really enjoyed. Perfect for after shoveling a load full of snow!! The only changes I made was using mixed beans and used dried oregano because that was what I had on hand.

Good soup! I only used one can of tomatoes and 2 cups water. I also skipped the sugar. I also used 3 Italian sausages. This would also be wonderful with pasta. Thanks for sharing!
