Step by Step Method

Step 1

Bring 3 quarts of water to a boil in a large saucepan and add soba noodles and cook for 4 minutes, DO NOT DRAIN, remove soba noodles from the water and place in a colander and rinse with cold water.

Step 2

Bring the pot of water back to a boil and add the stir fry vegetables and par boil for 3 minutes then drain into the colander with the noodles.

Step 3

In a medium boil, whisk together ginger, garlic, soy, sesame oil, peanut butter, fish sauce, and rice vinegar.

Step 4

Add the noodles and vegetables to a bowl and then add the spring onion and cilantro and stir well to combine.

Step 5

Serve cold or at room temperature.
